SmartMom hosted our first ever recipe contest! In honor of the SmartMom’s Tour of Tuscany, the theme was Italian food and the recipes had to be originals. Chef Rodelio commented that the reason he chose this recipe was that, “The ingredients hit home with me. I could taste the dish as I was reading the recipe. I can’t wait to try this!”
Congratulations, Nikki! Your amazing recipe will be featured on Chef Rodelio’s menu at his restaurant in Italy and he will personally prepare this meal for the group of travelers participating in the SmartMom’s Tour of Tuscany!
Without further ado, here is the winning recipe:
Cavatelli Italian Soup
About 4-5 cups of homemade, hand-rolled Cavatelli pasta. (Store bought is fine, DJ-Nikki made her own!)
10 cups of chicken stock
3 medium zucchini, (quartered and thick sliced)
5 small potatoes, cubed small
1 pkg. of sliced mushrooms
2 large white onions, coarsely chopped, ( sauteed in butter with 3 Tbs. of minced garlic)
0.5 tsp of coriander
0.5 tsp. of cinnamon
1 Tbs. of cumin
1 large bay leaf
2 tsp. of basil
1 tsp. of oragano
2 colored sweet peppers, cut into strips.
2 cans of fire roasted tomatoes
1 tsp. of Browning seasoning
0.25 tsp. of anchovie paste
1 tsp. of celery salt
1 Tbs. of ground bkack pepper
Bring all ingredients to a rolling boil, reduce heat, and simmer for 1 hour.
DJ-Nikki Hall said the reason she submitted this particular recipe for the contest was “my daughter said she wanted some homemade soup today, since it’s soooo cold outside… we made this for the very first time… and it turned out amazing!”
