6 Family Friendly Italian Recipes from Everything Erica

To celebrate our SmartMom’s Tour of Tuscany, we are sharing our some of our favorite recipes from Real Life SmartMom Erica Eckman of food blogĀ Everything Erica! As a mother, Erica understands that a home-cooked meal isn’t always feasible with little ones running around, but it feels so good when accomplished. Her recipes are easy to make, look like a professional chef prepared them, and please everyone in the family. Enjoy!

Here are some of her easy, family friendly Italian recipes:

6 Ingredient Spaghetti Carbonara

Spaghetti Carbonara is a Tuscan staple!

Easy 3 Ingredient Flatbread Pizza Dough

I don’t know about you, but I pin just about anything that has 3 ingredients. Less shopping for this SmartMom.

Truffle Mushroom Pea Risotto

  1. Sneak in some veggies for your picky eater with risotto.
  2. Adding strong flavors like truffle to a dish of an early eater can help prevent them from becoming the dreaded picky eater.

Heavenly Cannoli Dip

This is a super fun way to have a cannoli, family-style. Also, kids LOVE to dip things!

Pistachio Pesto Pasta

Pesto is typically made with pine nuts, but substitute pistachios for this recipe … they are more likely to be in your cabinet anyways.

Erica’s Crispy Chicken (or Eggplant) ParmesanĀ

No more soggy Chicken or Eggplant Parmesan due to this trick that Erica came up with at age 6!
